The cook's own notebook against one recipe, which is what turns a recipe into yours. Four dated cooks with what was changed and what each scored, and above them the pattern counted out of those entries as small proportional bars rather than asserted. A substitutions table sits under it, and the personal quantities at the foot are the printed amounts with every difference computed against them, including the four extra minutes on the leeks pushed back through the schedule.
